Zucchini Rolls with Herbed Ricotta & Mint

Ingredients

Zucchini – 1 large (sliced lengthwise)

Ricotta cheese – 150g

Mint – 1 tbsp, chopped

Garlic – 1 clove, minced

Roasted red pepper – 1, sliced

Black pepper – to taste

Olive oil – for grilling

Instructions

Grill zucchini strips until soft.

Mix ricotta, garlic, mint, and pepper.

Spoon mixture on zucchini, roll up, and top with red pepper.

Drizzle with olive oil and serve warm or cold.
